2019 Taub Family Vineyards Beckstoffer Vineyard Georges III Cabernet Sauvignon
Grapes were hand harvested, hand sorted and destemmed. A 3 to 5 day cold soak was followed by ~14 days of fermentation with 3 daily pump-overs. Fermented to dry on skins with 7 to 14 days extended maceration to optimize flavor, mouthfeel, tannin structure. Transferred to French oak barrels for malolactic fermentation and ageing. Aged for 22 months in 75% new French oak.
Complex and richly layered with tremendous power and weight, this wine is a showcase of luxurious texture and remarkable intensity. Lifted aromas of cedar, baking spice, and clove introduce a laser-focused palate that is packed with ripe red fruit, black cherry, and plum, flecked with notes of dark chocolate, graham cracker, and roasted coffee bean (1,710 bottles produced).
