2019 Taub Family Vineyards Beckstoffer Vineyard Georges III - Block G Cabernet Sauvignon
Cold soak takes place for 3-5 days, followed by 14 days of fermentation with cap management adjusted to the lot and expected extraction profile. The wine is fermented nearly dry on the skins, after which it is drained, pressed, and transferred to French oak barrels for malolactic fermentation and aging. Aged for 20 months in 100% French oak (80% new — Taransaud, Sylvain, Darnajou, and Vicard 7) at medium and medium + toast levels.
Complex and richly layered with tremendous power and weight, this wine ripples with remarkable flavor intensity and opulent texture. Lifted aromas of toasted baking spice and clove introduce a highly focused palate packed with ripe black cherry, plum, and red berries, wrapping around a core of dark chocolate and roasted coffee (1,440 bottles produced).
