2019 Taub Family Vineyards Morisoli-Borges Vineyard Cabernet Sauvignon

Grapes are hand-harvested, destemmed, and hand-sorted. Cold soak lasts for 3 to 5 days, followed by approximately 14 days of fermentation with three daily pump-overs. Fermented to dry on skins with an additional 7 to 14 days extended maceration to optimize the flavor, mouthfeel and tannin structure of the wine. Drained, pressed, and transferred to French oak barrels for malolactic fermentation and ageing. Aged for 22 months in 80% new French oak.

Brimming with aromas of dark plum, blackberries, and savory hints of tobacco, anise, and herbs de Provence, this Morisoli-Borges expression is full-bodied, broad, and plush with tremendous structure and intensity. The palate shows blueberries, black and red currants, baker’s chocolate, coffee, and a classic dusty note. The bright, lingering finish is lifted by nervy energy and vibrant acidity (2,400 bottles produced).


Complex and compelling, this deeply flavorful wine is also harmonious and a pleasure to sip even at this young age.

Hints of caramel and baking spices accent black cherries on the nose of the 2019 Cabernet Sauvignon Morisoli-Borges Vineyard. This is a full-bodied wine, supple across the mid-palate but then firming up and showing more tannin on the long, velvety finish. Give it a couple of years in the cellar. —Joe Czerwinski

Complex and compelling, this deeply flavorful wine is also harmonious and a pleasure to sip even at this young age. Fine-grained tannins lend a silky, almost creamy texture that effortlessly carries mint, black cherry and black-currant flavors across the palate and into a lingering finish.
