2019 Taub Family Vineyards Beckstoffer Missouri Hopper Vineyard Cabernet Sauvignon
Grapes are hand-harvested, destemmed, and hand-sorted. A cold soak for 3 to 5 days is followed by approximately 14 days of fermentation with three daily pump overs. Fermented to dry on skins with an additional 7 to 14 days extended maceration. Drained, pressed, and transferred to French oak barrels for malolactic and ageing. The wine is aged for 22 months in 50% new French oak.
Full bodied and impeccably balanced, there is a sense of purity and freshness radiating from a core of supple tannins and seamlessly integrated oak. The nose is redolent of violet, sandalwood, cedar, and cigar box. On the palate, generous layers of cherry, black currant, and blackberry linger with hints of plum cake, tobacco leaf, and molasses on the finish (2,100 bottles produced).

The 2019 Cabernet Sauvignon Beckstoffer Missouri Hopper Vineyard only saw 50% new French oak, so the nose here is more fruit driven, with scents of black plums, blackberries and cassis, plus minor herbal notes of tobacco and sage. It's medium to full-bodied, nicely supple and approachable already, with layers of dark fruit and spice that slowly unfold on the finish. — Joe Czerwinski

Concentrated, contained and very young, this powerful, full-bodied wine tastes jam-packed with dark berries and dark chocolate while firm, fine-grained tannins give it a big mouthfeel. Time will improve the feel of this multifaceted wine and allow its flavors to further complexify. Best 2028–2040. — Jim Gordon
