2023 Taub Beckstoffer Missouri Hopper Vineyard Cabernet Sauvignon
Located on the southern border on the west side of the Oakville AVA, Beckstoffer Missouri Hopper was originally part of a large piece of land owned by Yountville namesake, George C. Yount. Because of its gravel and silty clay loam soils, vine roots are forced to burrow deep in search of water, producing grapes with layered, concentrated, and balanced flavors. This 2023 expression from the Taub family is truly exceptional.
Grapes are hand-harvested, destemmed, and hand-sorted. A cold soak for 3 to 5 days is followed by approximately 14 days of fermentation with three daily pump overs. Fermented to dry on skins with extended maceration. The wine is aged for 20 months in 75% new French oak.
